Thursday's Thoughts.

-Getting my hair cut and colored today after work - yay!
In my dreams, it would look like this afterwards (but slightly lighter in color):

-Tomorrow night, I'm going to meet up with my old soccer bud, Lindsay, and her hubby for a little while at Hometeam BBQ to hang out and listen to their friend's band! Excited!

-I can't believe it, but I won that Sweet Tea Paperie giveaway I posted about last week from Katie at Keep Calm & Carry On!

-So excited for this weekend! Going to the Carolina / Auburn game with Emily, Caroline and Emily's husband! Nothing gets me more pumped up (and stressed out) than Gamecock football! Cameron will actually also be up there, but for his brother's bachelor weekend. Oh lawd.

Confession.

I did something totally unacceptable on Saturday.
I wore purple to the Clemson game.
(hanging my head in shame)
I feel like a traitor.
I'm ashamed.
I feel dirty.
And I'm nervous for when my family and friends read this post.

I had on my black dress, ready to walk out the door and then Cameron gave me this long schpeal about how we had these awesome seats in the middle of all IPTAY members blah blah blah and after fighting it for what felt like 10 solid minutes, I caved.
BUT after he shook hands on a promise that he would wear black to the USC / Auburn game next weekend, I felt a tiny bit better.

I did have a great weekend up in Clemson and Cameron's friends weren't too hard on me. Plus, I got to go back to the tailgate after the game and watch Carolina beat Vandy (even found a few fellow Carolina fans!).

Jenny and Dan were at the game, too! Jenny's jaw dropped to the ground when she saw what I was wearing.

He was a happy guy to be back in his stadium.

This made me happy. :)

Thursday's Thoughts.

-Didn't have to be at work today until 1:30pm due to an event later tonight. Gone are the days of sleeping in. I was wide awake by 9:30am (This may be considered sleeping in to some of you, but not to me). Spent my morning at Michael's, Big Lots and Old Navy. Walked out of ON spending $20 total on a black dress ($2!) and 2 scarves! Score!

-One of my fave bloggers, Katie, is hosting an awesome giveway! A monogrammed lucite tray from Sweet Tea Paperie. Go here to enter!

-Cameron is dragggggggggging me (jk, I'm somewhat happy to go) to Clemson this weekend for the Clemson / FSU game. No, I will NOT be wearing orange or purple. But I will be having fun.

-I made that Pioneer Woman Italian Chicken Soup last night. And was let down, which is a rare occasion for her recipes. :( Too much pasta and not enough juice. Was WAY too spicy also. Going to update it after this..

Tasty Tuesday - Italian Chicken Soup

With the weather cooling down as it has and a weather forecast of rain every day this week, I just had to post another soup recipe.
When I got this recipe in my inbox last week, I got REALLY excited. It sounds just like Carrabba's Mama Mandola’s Sicilian Chicken Soup, which is my favorite soup OF ALL TIME.
This is on the menu for Thursday night and I cannot wait to make it!


Pioneer Woman's Italian Chicken Soup

Ingredients

1 box Ditalini Pasta (very Short Macaroni-type Pasta Noodles)
1 Tablespoon Olive Oil
1 whole Cut Up Fryer Chicken
8 cups Low Sodium Chicken Broth
1 whole Medium Onion, Diced
2 whole Green Bell Peppers, Diced
2 stalks Celery, Diced
2 whole Fresh Jalapenos, Diced
1 Tablespoon Olive Oil
1 can (28-ounce) Can Whole Tomatoes
2 cups Heavy Cream
1/3 cup Extra Virgin Olive Oil
4 Tablespoons Minced Fresh Oregano
Salt And Freshly Ground Pepper, To Taste
Parmesan Cheese Shavings, For Serving

Preparation Instructions

Cook pasta in a pot according to package directions, being sure not to overcook it. Drain and rinse in cold water to cool. Toss in 1 tablespoon olive oil and set aside.

Place chicken in a large pot or dutch oven and cover in chicken stock. Bring to a boil, then simmer chicken, covered, for 30 minutes. Turn off heat and leave covered for 30 minutes. Remove chicken from pot and shred meat. Discard bones and set meat aside.

Dice canned tomatoes and return them to their juice. Set aside.

Heat a small skillet over medium high heat. Add olive oil and oregano and turn off heat, stirring over the next minute to keep oregano from burning. Set this aside.

Either pour off chicken broth into a separate container or use a new pot to saute onion, green pepper, celery, and jalapenos in 1 tablespoon olive oil over medium heat until tender and golden brown, about 10 minutes. Add chicken broth, shredded chicken, and tomatoes with their juice. Bring to a boil, then reduce to a simmer. Add cooked pasta, cream, and all the oregano and olive oil from the small skillet. Stir to combine. Turn off heat.
Serve with lots of Parmesan sprinkled on the top--the more the better! Crusty Italian bread is good, too.

UPDATE: I made this last night (9.21.11) and it was REALLY spicy, too many noodles and not enough juice. I would cut the amount of pasta in half and only use ONE jalepeno. Delicious other than that! :)

Jenny's Wedding Pics by Juliet Elizabeth Photography

I've pretty much been obsessed with Jenny's wedding photographer for quite some time now. And she (Juliet) knows it. So when Jenny got engaged, I immediately sent her all of my favorite wedding vendors. I knew that Jenny would love Juliet's vintage-y, relaxed, but FUN feel in both her pictures, and her personality. Jenny took a look around Juliet's website, fell in love with her pics, a few weeks later had a meeting with Juliet and fell in love with Juliet, herself. Do I know Jenny, or what? (I do.)

Jenny's first photoshoot was for her bridal portraits and they were taken at Legare Waring house (my fave!) on a HOT July day. Her two maids of honor and two bridesmaids, including myself, were there to lend a helping hand.


And on to the wedding day..
