Greek Quinoa Salad.


This isn't exactly a recipe that's new or innovative, but if you still haven't hopped aboard the quinoa train yet, this is your chance to do so. It is so good and I am literally counting down the hours until lunch when it's time to eat this! I made a big batch of it for Cameron and I to eat throughout the week.


Greek Quinoa Salad

1 cup quinoa, rinsed
1 and 1/2 tsp. Knorr tomato bouillon, optional but recommended!
1 cup cherry tomatoes, halved
3/4 cup black olives (or sub kalamata olives)
1 ripe medium avocado
1 cup cucumber, chopped
1/4 cup feta cheese


Dressing

1/4 + 2 tbsp red wine vinegar
1 tsp. dried oregano
1 clove garlic, minced
1 tsp. salt, or to taste preference
1/2 tsp. ground pepper
1/2 cup extra-virgin olive oil

  1. I try to like quinoa but I'm just having a hard time liking it! This recipe looks so yummy though! Will have to try it for sure!

  2. Yum! This is one of my favorite salads, ever since visiting Greece and having legitimate kalamata olives, feta + olive oil. So good and pretty healthy, too. How do you keep the avocado from browning when you make ahead?

  5. I did this last week and we were so obsessed with it. It carries great for lunches too.

    This week we were kind of burned out from Quinoa so I made the exact same salad but subbed in tortellini instead of quinoa and it is equally as delish.

  6. I make this all the time, but leave out the olives. It’s such a good lunch and lasts all week!
