Well, after months of eating whatever we want, we've decided to get back on the no/low carb dinner train during the week. After all, boat weather will be here before we know it! Last time we did this, I felt like I was always making the same thing. This time, I've got some new veggie recipes in the mix and I'm hoping they'll all be a hit!
Here's what I'll be making for dinner this week..
Wednesday - Pork chops with mushrooms with Cinnamon Roasted Butternut Squash
Thursday - Grilled chicken breasts with pan seared Brussels sprouts with gorgonzola and cranberries
Friday - Out to eat
Saturday - Rebecca & Marcus' Wedding!
Sunday - Bacon-Cheddar Cauliflower Chowder

ReplyDeleteEverything looks delish! We try to avoid carbs during the week, too - but them we feel like crap on the weekends when we eat too much junk. Keeps us encouraged to stay on the wagon!
ReplyDeleteEvery time I have brussel sprouts at a restaurant I love them but for some reason I'm intimidated to try them at home. That recipe looks doable though and right up my alley. Please let us know how that chowder is, it looks amazing and I'm curious if it's a legit substitute for potatoes.
ReplyDeleteSometimes you really need to cut the carbs out at night....it is definitely hard but these recipes look great! I try to plan my meals out for the week as well....leads to not looking at each other at 7 at night going "what do you want...." "I don't know what do you want?" :-)
ReplyDeleteI've been cutting out the carbs for dinner at night too - this week, my favorites have been tomato soup and Natalie's (Designer Bags & Dirty Diapers) Mexican salad bowls.
