Found this recipe in the 2011 Spring Cookbook Issue of the West Of newspaper. It was submitted by Ski-Bo's restaurant on James Island.
Green Tomato Salsa
(I have no idea how much this makes)
5 green tomatoes
1 white onion
3 garlic cloves
2 jalepeno peppers
1 tsp ground cumin
1 tsp chili powder
1 tsp kosher salt
1 1/2 tsp black pepper
1 tbsp white vinegar
juice of one lime
Quarter the tomatoes, onion and jalepenos and place in a food processor, along with the cumin, chili powder, salt, pepper, vinegar and lime juice. Pulse all ingredients until mixed well. Refrigerate until needed.
