Charleston Girls!

Spring is literally right around the corner (11 days!) and the weather is already starting to warm up. Don't you already want to have that sun-kissed look when you break out the short dresses, tank tops and white shorts?? I do!

Thursday's Thoughts.

Thank you for all of your sweet comments regarding my Wedding Wednesday post! All of your excitement got me even more excited! :)

Now on to my random thoughts for the day..

-One of my co-workers brought Trader Joe's pumpkin butter to work this week. Ummm how have I been living without this stuff?? It is SO good. I put it on my toasted whole wheat english muffins as a mid-morning snack and it totally hit the spot. Next time I'm in Mt. Pleasant I am DEFINITELY picking up a few jars.

- {av} at long distance loving did a great post today on self-tanners. It was perfect timing for me because I just started using my self tanner again and do not like the kind I'm using. It's smelly, sticky and makes my face feel greasy. Go check it out and let her know which self tanner is your favorite!



-This weekend I will be heading to Savannah for Jen's bachelorette party! As close as it is, surprisingly I have never been out in Savannah! I've seen a few blog posts recently about bachelorette parties in Savannah and they've all had a blast so I have no doubt in my mind that we will, too! I just hope I don't come home as hungover as Cameron did last weekend from his friend's bachelor party...yes, I just called you out. :)

Wedding Wednesday: The Dress.

Good morning! Sorry if I have been somewhat MIA lately..I've been in kind of a blogging funk. I've been reading everyone's blogs but have honestly been too lazy to comment. And too lazy to post. Don't leave me - promise I'll be back in full swing soon! :)
Last Friday, I took half a day of work off so I could go to two dress appointments. The first store we (Mom and sister) went to, I knew was probably out of my price range but they were having a store wide sample sale so I thought I would maybe get lucky. I did find a dress there that I liked (not obsessed with though) and then we were on to the next appointment.

I had a feeling I was going to find my dress at the next store.

 Earlier that week I gave the store a call asking if they had a specific dress in the store and they did! I got really excited because I loved everything about this dress....in pictures. Once I got to the store I got nervous because I was scared my hopes were going to be too high! I took about 10 dresses with me to the dressing room, making sure to save that dress for last.

 Finally, I put the dress on, clipped it in the places that needed clipping and walked out of the dressing room. My mom, my aunt and my best friend's eyes all lit up. I put on a veil and it made the moment even more real. The girl from the store who was helping me handed me a bouquet of flowers. Then there were tears..from everyone. I didn't want to take the dress off. This was it!

Unfortunately, I'm not going to post pictures of the dress or any other dresses I tried on. You'll just have to wait a year for that! BUT if you follow me on Pinterest, let's just say that the dress is pinned to my wedding board. :)

Tasty Tuesday - Grilled Zucchini & Red Onion with Lemon-Basil Vinaigrette

I will no longer grill vegetables withOUT putting this vinaigrette on them. SO GOOD. We also added some baby bella's onto the skewers for more of a veggie variety. :) Enjoy!


Grilled Zucchini and Red Onion with Lemon-Basil Vinaigrette

1 lb zucchini, sliced into 1/3-inch rounds
1 red onion, sliced into 1/2-inch rounds
1/4 cup + 2 Tbsp olive oil
Salt
Pepper
1 clove garlic, minced
Zest and juice from 1/2 lemon
1 tsp spicy brown mustard
3-4 large basil leaves, chopped

Heat grill to medium.
 
Carefully thread the onion rounds onto skewers (this will keep them in tact as rounds while grilling), making sure the skewer goes through every onion ring.
 
Brush onions and zucchini rounds with 1/4 cup olive oil and season liberally with salt and pepper.
 
Grill vegetables 9-10 minutes each side, until nicely caramelized.
 
In a small bowl, whisk garlic, lemon juice, zest, mustard, oil, and a pinch of salt and pepper together.

Place cooked vegetables on a platter, drizzle with dressing, and top with chopped basil leaves.

Finally a weekend recap + giveaway winner!

Happy February 29th!

This weekend was so much fun! Where to begin?
 Oh yeah, Friday night.

We were just planning on eating dinner and hanging out at the house with Emily and David Friday night but David randomly got tickets to see Corey Smith at the Music Farm...so that's what we did! Left about half way through the concert and met some friends at Mercury (the back patio part...the front part was more of a club and it reaked of BO. gross.) The night ended with a tasty treat from a street vendor. :) It was a random night for sure, but sometimes those are the best ones!

Saturday was full of wedding activities! First, looking for a dress to wear on our big day and later that evening, we celebrated Shelby & Trey on their big day! I would love love love to post pictures of the dresses that I tried on, but believe it or not, Cameron reads my blog. I will say that there is one dress from that store that is currently in the running. I have 2 more appointments on Friday and one on Saturday morning. I'm on a mission!

After playing dress up and grabbing lunch at Five Loaves, I came home, took a quick nap, and got ready for Shelby & Trey's wedding! I've been really excited for this wedding not only because they are such a fun couple, but because I knew they'd have a killer band and it was at one of my favorite Charleston wedding venues, The Legare Waring House.

Sunday we were both surprisingly NOT hungover so we joined Caroline and Andy for brunch at The Early Bird Diner. LOVE that place. After that, we came home and were actually very productive! Cameron cut the grass, I did laundry and we cleaned out our "junk room." You can actually walk in there now! AND I have a dedicated "dress closet" now! Heaven!

Tasty Tuesday - Cucumber Bites with Garlic Herb Filling

Anything with Boursin cheese on/in it is a winner in my book. Try these super simple appetizers for your next get together!


Cucumber Bites with Garlic Herb Filling

For the filling:
1 (5.2 oz) package garlic herb Boursin cheese
2-3 tbsp. heavy cream

To serve:
1 cucumber, peeled (partially or totally, as desired)


To make the filling, place the boursin in a small bowl. Add in 2 tablespoons of the heavy cream and stir with a fork until lightened and smooth. If needed, stir in an additional tablespoon of cream until the mixture is a good consistency for piping. Transfer the mixture to a pastry bag fitted with a decorative tip; set aside.

Slice the cucumber into ½-inch thick slices. Gently scoop out most of the seeds from the center of each slice, leaving a small portion to keep the filling from falling out. Arrange the slices on a serving platter. Pipe a dollop of the filling onto each cucumber slice. Serve chilled. (Note: These can be assembled and refrigerated up to 6 hours in advance of serving.)
