What I'm Loving Wednesday!



I'm loving the yummy salad that I made for dinner last night! True Story: When I got home from work yesterday I sat down on the couch and turned the tv on. The first thing I see are Nicole Scherzinger's abs. I was originally going to cook Pioneer Woman's Chicken Spaghetti for dinner but after seeing her six-pack on tv, I took Brady for a walk/run and decided a salad would be on the dinner menu instead.

Tasty Tuesday - Creamy Chicken Tortilla Soup

Creamy Chicken Tortilla Soup

Ingredients:

1 Rotisserie chicken, meat shredded
1 39 oz "box" low sodium chicken broth
1 can creamed corn
1 1/2 cups chopped bell peppers (I used frozen since I was in a hurry)
1 can black beans, drained and rinsed
1 can navy beans, drained and rinsed
3/4 - 1 jar salsa verde
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cumin
Optional: A dollop of sour cream

Directions:

Throw this ALL into a large pot and let it simmer for about 30 minutes. Or put in a crockpot on low for how ever long you'd like! Really simple!

Sunday...Funday?

After the craziness of Celebrate Kiawah (event was a success but atleast 800 people came!), I thought a nice Sunday spent kayaking would be a great way to relax. Little did I know that our "relaxing trip" would turn out to be 8.2 miles roundtrip!

We met Cameron's brother and soon-to-be sister in law at his Aunt & Uncle's house, where the kayaks were located, at about 1:30pm. We loaded up the kayak's and were on our way. We decided to make our way to Stono Cafe for some drinks and appetizers. I knew it would be a little trek, but I didn't know how MUCH of a trek it would be. Once we got to the restaurant at around 3:30pm we ordered some bloody mary's and listened to the live music. It was a beautiful day!

I was a little hesitant to make the long journey back but Cameron wasn't going to let me quit. We passed the time by singing "Row Row Row Your Boat" and goofing off. We made it home around between 6-6:30pm I think. Below is a map of our journey!
All in all, I'm glad we did it! It got us outside to enjoy the day and it was a new experience for the both of us! My arms are sore and and I'm a little sunburnt today (I did put on sunscreen Mom & Dad, I just missed a few spots), but hearing Cameron tell me he was proud of me at the end made it all worth it. :)

1. Do you know what your REAL hair color is?
 
Plain ol' brown. Why couldn't I have just been born a blonde? Would have saved a me LOT of money.

2. Do you plan ahead for summer, or fly by the seat of your pants?
 
Not really. It's usually planned for me between work weddings and personal weddings/showers, I really don't have time for much else. I'll be lucky to get in 5 boat days this year. 

3. What is your favorite meal to cook?
 
Anything that is easy with 5 or less ingredients! Want to send me your favorite??

4. Do you get offended by not receiving thank yous?
 
At first I was going to say yes. If I take time out of my schedule (and money out of my wallet) to buy you a present, I think you can be nice enough to send me a simple thank you note. But then I thought about it. How many times have I forgotten to send a simple thank you note? Lots of times I'm sure. Even though I have a TON of blank stationery and thank you notes. I plan to be better about it, promise!

5. How did you meet your best friend?
 
Chi Omega! We pledged the same sorority our freshman year of college. There were 4 of us that were always together. Me, Emily, Jenny and Jordan.

What I'm Loving Wednesday!


 I'm loving that I had the past two days off from work! I got a lot of (not-so-exciting) stuff done around the house. Sorry I missed yesterday's Tasty Tuesday, though!

I'm loving that my friend, Caroline, started a blog! Go here to take a look. We've known each other probably since we were born and our mom's were even in each others weddings back in the day! :)

I'm loving that this weekend is our big community event at work! It's called Celebrate Kiawah and it's a complimentary event for all of the property owners. We'll have a caterer, a band by the pool and an acoustic guitarist upstairs! We've already received 830 reservations!

I'm loving that I got to see and catch up with Jenny & Dan on Monday night! They were in town doing some wedding planning and stopped by to see the new house and eat dinner. 

I'm loving that my friend, Becca, and her husband are having a baby boy! He is due July 22nd. 

 I'm lovvvvvving this dress by Diane von Furstenberg! It is perfection in my eyes.
 And I'm loving all of the sweet, sweet comments that were left on Monday's post about my guy, Brady. :)
