Tasty Tuesday - Green Tomato Salsa

Found this recipe in the 2011 Spring Cookbook Issue of the West Of newspaper. It was submitted by Ski-Bo's restaurant on James Island.


Green Tomato Salsa
(I have no idea how much this makes)

5 green tomatoes
1 white onion
3 garlic cloves
2 jalepeno peppers
1 tsp ground cumin
1 tsp chili powder
1 tsp kosher salt
1 1/2 tsp black pepper
1 tbsp white vinegar
juice of one lime


Quarter the tomatoes, onion and jalepenos and place in a food processor, along with the cumin, chili powder, salt, pepper, vinegar and lime juice. Pulse all ingredients until mixed well. Refrigerate until needed.

Sissy's Birthday!

Today is my sister's 24th birthday! It is SO weird to me that my little sister is 24...which makes it EVEN more weird that I will be 28 in 6 months!

And now, a few tidbits about Stephanephanie (nickname from our Gradaddy Al).

When we were little, our roles were switched. She was the one who only wanted to wear dresses and my shorts could NOT be above my knees. My mom once punished me by making me wear a dress all day! Oh, how times have changed. Now, I would prefer to wear a dress every day and Steph prefers t-shirts, no make up and a ponytail.

She is more adventurous than her sister! Stephanie studied abroad for a semester in France in college!
Welcome Home! I even shed a tear or two when she came home (but didn't let her see)..the drinks I had before I went to the airport may or may not have been a factor.
She and her boyfriend share the same last name! Ok, so it's Smith and not super uncommon, but still! If they get married, her name will be Stephanie Smith Smith. hahahahha
Easter pic. Don't let the tiny bit of makeup, the dress and hair out of a ponytail fool you.
She is a Carolina graduate, just like her seester!

She likes to cook! Her specialty is chocolate chip cheesecake. If you ask nicely, she might make you one.

Wiggin' Out!

This weekend I will be in Dirty Myrtle (Myrtle Beach, SC for you non-SC'ers) for Jenny's Bachelorette Party! The theme: Wiggin' Out! Yes, my friends, I will be out in MB rocking a wig. The only other time I've worn a wig was for Halloween. It's just not my thing.

Cameron's soon to be sister-in-law LOVES to dress up for Halloween so instead of buying a wig that I would probably never wear again, I asked to borrow one of hers! Rather than just letting me borrow one, she showed up with a bag of about 7 of them! All colors and cuts imaginable.

Please excuse the crappy Blackberry pics and the no-makeup disheveled look - I had been sippin' adult beverages by the pool all day. :)





I promise to wear make-up and put the wig on straight this weekend. I'm kind of feelin' the long black one. What about you?

Tasty Tuesday - Shrimp Cobb Salad

While I was getting my hair done for Katie's wedding back in May, I was flipping through a Cooking Light magazine. I don't know if it was because I hadn't eaten lunch yet or what, but I was obsessed with every recipe in the mag and took Blackberry pics so that I could remember them! Fast forward to yesterday morning when I was looking through pics of me with various wigs on (more on that later) and came across the previously mentioned recipes! This recipe was perfect for lunch - I like to spoil Cameron and fix him a yummy lunch when I'm home from work during the day because it rarely happens. Hope yall enjoy!

Shrimp Cobb Salad Recipe

Shrimp Cobb Salad

YIELD: 4 servings
TOTAL: 20 MINUTES

Ingredients
4 slices center-cut bacon
1 pound large shrimp, peeled and deveined
1/2 teaspoon paprika
1/4 teaspoon black pepper
Cooking spray
1/4 teaspoon salt, divided
2 1/2 tablespoons fresh lemon juice
1 1/2 tablespoons extra-virgin olive oil
1/2 teaspoon whole-grain Dijon mustard
1 (10-ounce) package romaine salad
2 cups cherry tomatoes, quartered
1 cup shredded carrots (about 2 carrots)
1 cup frozen whole-kernel corn, thawed
1 ripe peeled avocado, cut into 8 wedges

Preparation
1. Cook bacon in a large nonstick skillet over medium heat until crisp. Remove bacon from pan; cut in half crosswise. Wipe pan clean with paper towels. Increase heat to medium-high. Sprinkle shrimp with paprika and pepper. Coat pan with cooking spray. Add shrimp to pan; cook 2 minutes on each side or until done. Sprinkle with 1/8 teaspoon salt; toss to coat.
2. While the shrimp cooks, combine remaining 1/8 teaspoon salt, juice, oil, and mustard in a large bowl, stirring with a whisk. Add lettuce; toss to coat.
3. Arrange about 1 1/2 cups lettuce mixture on each of 4 plates. Top each serving with about 6 shrimp, 1/2 cup tomatoes, 1/4 cup carrot, 1/4 cup corn, 2 avocado wedges, and 2 bacon pieces.

100% Natural Lipton Iced Tea - Get Some!

The people at Gen-YKnot recently contacted me about doing a review of the new line of 100% Natural Lipton Iced Tea. I immediately replied YES, SIGN ME UP! Ironically, I had just finished a glass of flavored tea with my lunch.

I received some six bottles of flavored tea - two flavors were previous, fan favorite flavors (Green Tea with Citrus & Iced Tea with Lemon) and two new flavors (Pomegranate Blueberry Tea & Green Tea with Passionfruit Mango)! The other two new flavors were Diet (no calories!) and included Diet Watermelon Green Tea & Diet Citrus Green Tea.

All flavors were so light and refreshing and I could definitely tell that the flavors were not fake. I have a really hard time staying hydrated during the day because drinking water just doesn't do it for me. Having flavored tea that tastes as good as these do will definitely do the trick!

My favorite flavor was the Pomegranate Blueberry, with the Diet Watermelon coming in as a close second. The Diet Watermelon was not as sweet and sugary as I was expecting, which is a very good thing! Cameron's favorite was the Diet Citrus Tea, in which he commented was a good drink for when it's really hot outside (pretty much April - October for us South Carolinian's).

The tea is available in 20 ounce bottles and will retail from $.99 to $1.59.

Lipton has also teamed up with Pandora to allow listeners to enjoy the natural side of music. The summer long stations include Lipton Pop, Lipton Country, Lipton Rock and Lipton Hip-Hop.
