Tasty Tuesday: Garden Fresh Bruschetta

Not going to lie, I've been in a recipe slump lately. Since Cameron and I haven't been eating carbs for dinner during the week, the recipes have been somewhat simple and repetitive.
 
I came across this recipe and could probably just eat this with a loaf of French bread for dinner.....if I ate carbs for dinner. Guess I'll have to wait until the weekend to make it. :)
 
Garden Fresh Bruschetta

20-24oz fresh tomatoes (4-5 roma tomatoes or 3-4 regular tomatoes) diced small
1 clove garlic minced
1/4 cup fresh basil chopped fine
2 Tbs olive oil
1 Tbs red wine vinegar
1/2 tsp each salt & pepper (or to taste)
1 baguette
Olive oil & fresh garlic for toasting
 


Mix all ingredients and let stand at room temperature for 2 hours.
 
Slice the baguette, brush with olive oil and lightly toast. Rub each toasted slice baguette with a clove of garlic.
 
Top with bruschetta.

  5. This is the first year I've grown tomatoes, and I am in awe that they are actually PRODUCING real, live, ripe red tomatoes! I'm defintely going to have to give this recipe a try.

  7. The simplest things are always the most delicious. Bruschetta is REALLY good on fish - try tilapia or salmon for a vehicle for your bruschetta instead of bread. All the flavor and none of the wheat!
