Tasty Tuesday - Kale with Pine Nuts & Garlic Vinaigrette

I made this salad Sunday night and it was so good! I was really surprised that both Cameron and I enjoyed it because the last time I tried to cook kale, I made kale chips and burnt them. Not so tasty. But THIS was tasty.

Kale with Pine Nuts & Garlic Vinaigrette

For the vinaigrette:
4 cloves garlic, finely chopped or minced
3 Tbsp lemon juice
1 Tbsp white wine vinegar
2/3-3/4 cup olive oil
1/3 cup finely shaved parmesan (~1 oz)
Salt
Pepper

For the salad:
1 bunch Kale, rinsed and dried
1/4 cup pine nuts
Parmesan, shaved (for garnish)
 
Add the garlic, lemon juice, white wine vinegar, a pinch of salt, and black pepper to a bowl and whisk together.

Let stand at least 15 minutes if you can (the longer the dressing sits, the more pronounced the garlic flavor is - and it will only get better overnight).

Slowly stream in the olive oil while whisking and then stir in the parmesan.

Heat a dry non-stick pan over medium-high heat and add the pine nuts.

Toast for 4-5 minutes, stirring once or twice until sides are golden brown.

Coarsely chop kale and add to a large bowl.

Lightly toss with a few tablespoons of dressing and garnish with toasted pine nuts and shaved parmesan.

  1. This is so similar to the kale salad I've been obsessed with but mine has red pepper flakes and bread crumbs. I'm impressed Cameron ate it, Matt took like two bites and said tastes like kale!

  3. This sounds delicious! I'm saving this recipe. I've always wanted to try kale because I heard it was so similar to lettuce and I love how light and simple this salad is!

  4. I burned my batch of kale chips when I tried to do them too! Maybe I'll give kale another shot with this recipe!
