Almost exactly 12 hours after I got the exciting news that Jen & Joe were engaged, I got ANOTHER exciting text - Savannah and Dan were engaged! That's two friends getting engaged in pretty much one day!

Tasty Tuesday - Supper Club!
Saturday night was supper club and it was our turn to cook! I had to work until 4:30pm and people were coming over at 7 so I was freaking out on my 40 minute drive home. Thankfully, I called my momma and she helped calm me down. I also did a lot to prepare on Friday!
Here is the menu:
Specialty Drink
Pomegranate vodka
Sprite
Splash of Blueberry Pomegranate juice
Garnished with Blackberries & Raspberries
Oh, and jello shots. Keepin' it classy here, people!
Appetizers
Mango salsa (a la Costco) and chips
Artichoke bruschetta
No recipe for the artichoke bruschetta..I kind of made it up as I went.
I just sliced up a loaf of french baguette into thin slices and put then in the oven at 350* until they got a little crispy.
Spread some cream cheese mixed with minced garlic on each piece of bread.
Then put a mixture of chopped artichokes, chopped tomatoes, little bit of olive oil, salt & pepper on each piece of bread and VOILA! They were a big hit!

Dessert
Chocolate Peanut Butter Pie
(Recipe from Pioneer Woman)
Ingredients
FOR CRUST
25 whole Oreos
4 Tablespoons Butter, Melted
(Or you can cheat like me and buy the pre-made chocolate pie crust)
PEANUT BUTTER FILLING:
1 cup Creamy Peanut Butter
1 package (8 Ounce) Softened Cream Cheese
1-¼ cup Powdered Sugar
1 package (8 Ounce) Cool Whip, Thawed
Preparation Instructions
Crust:
Crush the Oreos until they’re fine crumbs. Pour melted butter over the top and stir with a fork to combine. Press into pie pan and bake at 350 degrees for 5 to 7 minutes, or until set.
Remove from oven and allow to cool completely.
Filling:
Beat the peanut butter with the cream cheese until smooth. Add powdered sugar and beat until smooth. Add in the thawed Cool Whip and beat mixture until smooth, scraping the sides as needed.
Pour filling into crust, evening out the top with a knife or spatula. Chill for at least an hour before serving.
(I added some dark chocolate shavings to give it that extra chocolate!)

Thursday's Thoughts.

We went on a random-Wednesday-after-work-boat-ride last night and it was so perfect. I'm so mad my camera was dead! There were dolphin swimming by the dock when we were getting on the boat, Brady got to come and it was the perfect temperature outside!

Saturday is Supper Club is our house! Can't believe it's already been 4 months since we hosted it last time! We've started having it on the weekend so we can have a little fun (adult beverages) without having to go to work the next day. I'll be posting the menu on the next Tasty Tuesday!

I got rear ended on the way home from work Tuesday. Not to worry, I'm ok and there was only a teeny tiny bit of damage to my rear bumper. I didn't call the cops because the damage was so little, but I did get every single piece of information from her I could, including blood type, SSN, and a strand of her hair for DNA. (kidding.)

Also on Tuesday, I went to Sesame for dinner to celebrate Becca's birthday! She is 8 months pregnant and I swear she has not gained any weight, other than her belly! It's crazy! Towards the end of dinner she grabbed my hand and put it on her belly because Baby Davis started to kick..I love that feeling! When I moved my hand away, he kicked again and I SAW it! I was in baby heaven. Her sister is throwing her a baby shower next Saturday and I just ordered her gift off of Etsy today! Can't wait to show yall!

Tasty Tuesday - Boiled Peanuts!
I was stumped as to what recipe to provide as my Tasty Tuesday today because I haven't cooked anything new recently. But then, I saw these stack of cookbooks on my desk (long story) so I started skimming through them. Being true to my southern roots, I immediately stopped in my tracks when I saw "Lowcountry Boiled Peanuts." Pretty much the easiest recipes ever! If you've never had them, please try them for me! :)
Lowcountry Boiled Peanuts
(Serves 6)
Ingredients:
4 pounds green peanuts in shell
6 quarts water
6-10 tablespoons salt (I like mine reallly salty!)
Directions:
Place peanuts in a large stock pot with water and salt.
Cover, bring to a boil, and boil slowly for 1.5-2 hours.
Test for doneness; peanuts should be soft.
Allow to soak for 30 minutes. Drain.
May be frozen in plastic bags after cooling. Thaw and reheat by placing in microwave for 2 or 3 minutes.
And if you like a little kick...
Cajun Boiled Peanuts (my fave)
Ingredients:
2 lbs. of green peanuts in shell
2 tablespoons of salt
1 bag of Zatarain's Crab and Shrimp Boil
1 tablespoon of red pepper (or more, if you are feeling lucky)
Instructions:
Place the peanuts in a large pot and add enough water to cover them and almost fill the pot.
Add the salt and stir it real well.
Turn the stove to the high heat setting and cover until it boils.
Add the Zatarain's and the red pepper.
Reduce the heat just enough to keep it from boiling over.
Boil the peanuts for 4 hours. Add water as needed to keep the peanuts covered.
Drain the peanuts and serve.

So lazy. (and cotton ball earrings)
Just wanted to let yall know that I'm still alive! I think I'm going through one of those blog funks where I just can't think of anything interesting to say. I'm still reading all of yours though! Or, it could be because my schedule is so messed up this week. It went/goes a little something like this..
Monday - Worked 7am - 3:30pm, went to Red's/RB's for David's bday dinner.
Tuesday - Off work ie. did 3450845 loads of laundry while laying on the couch and watching tv. Seriously, the only time I left my house was to put gas in my car and go to the bank. I also felt like poo due to my sinuses.
Wednesday - Worked 7am - 3:30pm, took a nap from 4-5:30pm, went to Bible study from 5:45pm - 7pm, came home and crashed on the couch.
Today - Have a work wedding (that's currently going on upstairs) so I slept in until 10:30am. I'll be here until about 10pm tonight.
Friday - Another work wedding. Which means I will sleep in as long as possible, maybe hit up Harris Teeter for their tripled coupon week and head to work from 2:30pm - 11pm.
Saturday - ANOTHER work wedding.
I'm sure you all really didn't care about my schedule, but I just had to show how not normal it's been this week!
A few of you commented on the cotton ball earrings that the bridesmaids wore in Katie's wedding last weekend. I tried to find some information online, but all I could find was the designer and site to buy them on. So here ya go!

Katie & Henry are married!
I feel like I've been gone forever! Email inbox is full (I am the queen of procrastination) & I have a TON of blogs to read and catch up on, but being away since Thursday was definitely worth it!
Katie and Henry are such an amazing couple. They are very similar to each other in the fact that they would both do anything for their friends and family. Not to mention a blast to be around! Katie and I met when we pledged the same sorority in college (2002) and lived together for the past 3 years!

Bridesmaid Hair Debate.
For Katie's wedding this weekend, I'm leaving it up to the professionals to make my hair look like a celeb's as I walk down the aisle. As always, I am really bad at making decisions so I need yall's help picking out a 'do!

Here are some choices that I've printed out to bring to the salon. Keep in mind that I have very fine hair that won't hold a curl longer than 5 minutes. I've also got a side part and bangs that usually stay tucked behind my ears. Hate having hair in my face. Don't like it too poofy. I sound like so much fun to work with, huh?!?

Now that I look at them all side-by-side, they kind of all look the same. Haha! I'm leaning towards #2 (LC) though..a little relaxed, not too "perfect."

Monday Brain Dump.
Since I had a 3 day weekend and never read blogs while I'm off of work, I feel like I have so much catching up to do reading everyone's blogs! Hope you all had a great weekend and Mother's Day!
Here are my random Monday thoughts..
-Didn't get to go fishing last Friday due to the crappy weather. :( While I was disappointed, it felt GREAT laying in bed until 11:30am. Fixed Cameron lunch and when he went back to work I layed back down for another hour or so. Haha! I felt like such a lazy bum, but also felt like I deserved it. I did make a quick trip to the grocery store, BBB to buy Jenny a shower present, and made some banana bread! See, there was some productivity!
-Friday night, Cameron's friend James spent the night (first overnight guest!) so I made Caroline's baked spaghetti (big hit, once again). Everyone made it an early night because the boys were supposed to go fishing Saturday. That didn't happen, once again because of the weather.
-Saturday I went to Jenny's "Around the Clock" wedding shower in Columbia! Jen & Kristen did an amazing job with the decorations and food! Here are a few pics that I took..

-The boys + Shelby went out to Morris Island on Saturday and Shelby texted me a pic of Brady having a blast! He was one pooped pup when I saw him later that night!
-Sunday Cameron woke up not feeling well so we had to miss out on Emory's baptism and lunch. :( I let him sleep in while I made a dip for Mother's Day, then we went out to John's Island to take my sister and her boyfriend on the boat for a bit. Pretty sure I was on the verge of getting sun poisoning as a result from Katie's bach sunburn because my entire stomach was covering in teeny tiny blister looking things. TMI? Sorry. Headed back to his parents house for a Mother's Day celebration with both mine and Cameron's families, including our grandma's! I love that both of our families live in the same town and get along so well!

Guest Bedroom!
I don't have every little thing decorated yet in the guest room, but I just cannot wait any longer to show you the furniture that I painted! So let's start from the beginning...
