Game Day + Hootie Sound Check and Concert!

If you live under a rock, or maybe just don't listen to country music or early 90's rock, that my friends is Darius Rucker!

One of Cameron's brother's friends is Darius' right hand man on tour and hooked us up to go to watch the Hootie and the Blowfish sound check last Thursday night (afterwards, we hung out on his tour bus, but sadly Darius had gone home) and got us VIP passes for the show on Saturday night! Talk about the best weekend ever!!

Katie's Baby Shower!

This past Saturday, I and six other friends hosted a baby shower for our sweet friend, Katie, and her baby boy, Ashton! Having it at my house, there was a lot of pressure (just from myself, of course) to make sure everything was perfect -- which is why I have been absent from my blog recently.
 
Let's start with the invitations.
Right about the time we started talking about Katie's shower, a Groupon/Livingsocial popped up in my email for an invitation company called Simply To Impress. I checked out their selection (always do this before purchasing!) and was actually impressed (no pun intended) with their selection and non-cheesy baby shower invitations. With the coupon code, I only spent $25 on 50 invitations (don't worry, not all 50 showed up haha) - which is awesome! Aside from the cute invitations, I thought their packaging was also really cute.
 
 
 
Savannah had the great idea of everyone giving Katie/Ashton their favorite childhood book instead of a card to help build Ashton's library. So I made a label that went on the inside of the book so that they could always remember who gave them which book! Katie loved it!!
 
And now on to the shower..
 
Some of the details.
{blue raspberry suckers as favors - personalized napkins - recycled ribbon from KA's shower made into a wreath - an alternative to a diaper cake, a diaper baby! - suckers and a sign saying "Boys are sweet, please take a treat" - A is for Ashton sign and baby blue paper straws}

Tasty Tuesday: Tilapia Tacos with Cucumber Relish.

Life has been so crazy and hectic lately, that I've been slacking on my meal planning and totally scrambling to put dinner together every night.  Yesterday, I finally had a free 10 minutes to actually think about what I would be cooking this week. When meal planning, I always try to think about what kind of meat I already have in my freezer and what other ingredients would complement it and come together for a tasty dinner.
 
The first recipe I added to my list was this tilapia taco with cucumber relish recipe. I didn't have to buy a thing for them and they were so easy and quick to make! And after tasting them, they were delicious to top it off! Will definitely be making these again.
 
Here is the recipe, with a few of my tweaks.
 
Tilapia Tacos with Cucumber Relish

1 tablespoon olive oil, plus more for the grill
4 6-ounce tilapia, halibut, or black bass fillets
1 teaspoon ground coriander
kosher salt and black pepper
6 radishes, sliced (I omitted)
1 cucumber, halved and sliced (I diced)
1 diced tomato
2 tablespoons fresh lime juice, plus lime wedges for serving
8 corn tortillas, warmed
1 cup fresh cilantro leaves
1/4 cup sour cream

 

Heat grill to high; oil grill. Season the fish with the coriander, ½ teaspoon salt, and ¼ teaspoon pepper (and lime juice) and grill until cooked through, 1 to 2 minutes per side. Break into pieces.
In a medium bowl, toss the radishes and cucumber (and tomatoes) with the lime juice, oil, and ¼ teaspoon each salt and pepper. Serve the fish in the tortillas with the cucumber relish, cilantro, sour cream, and lime wedges.
