WAIT!! Please do not "x" out of my blog at the sight of the word "meatloaf" - I would have. But the words "feta" and "sun dried tomato" kept me around a little longer. Growing up, I would not touch my mom's meatloaf. It could have been because I think she put onions in it and I DESPISE onions. But I had some ground turkey in the fridge that I needed to use and I came across this recipe on FoodNetwork.com. I later found out that Natalie from a new blog I read, Designer Bags and Dirty Diapers, also made this recipe and loved it!
Turkey Meatloaf with Feta and Sun-Dried Tomatoes
Ingredients
- Vegetable cooking spray
- 1/2 cup plain bread crumbs
- 1/3 cup chopped fresh flat-leaf parsley
- 1/4 cup chopped garlic and herb-marinated sun-dried tomatoes
- 2 cloves garlic, minced, optional
- 2 eggs, at room temperature, lightly beaten
- 2 tablespoons whole milk
- 1/2 cup crumbled feta cheese
- 1 1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 pound ground turkey, preferably dark meat
Directions
Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F.
I served with roasted asparagus and artichokes (and red wine) just because that's what I had laying around. :) Enjoy!
Spray a 9 by 5-inch loaf pan with cooking spray.
In a large bowl, stir together the bread crumbs, parsley, sun-dried tomatoes, garlic, if using, eggs, milk, feta, salt, and pepper. Add the turkey and gently stir to combine, being careful not to overwork the meat.
Carefully pack the meat mixture into the prepared pan and bake until the internal temperature registers 165 degrees F on an instant-read thermometer, about 45 minutes.
Remove from the oven and let rest for 5 minutes.
Suggestion - I would suggest ommitting the salt from the recipe. It is salty enough.

ReplyDeletei didn't eat my mom's meatloaf growing up because of the name "meatloaf". A loaf of meat. really? but then i grew up, read your blog and thought, "hmm if megan likes it, it must be good!"

ReplyDeleteHmm, I'll admit I was a little skeptical about the word meatloaf, but this one looks good! My mom made meatloaf last night and added a few extra ingredients, and it was actually pretty tasty. I just wish it had a more glamorous name!!

ReplyDeleteYou can find them in the canned food aisle most of the time, but my most recent discovery was finding them at the olive bar and chopping them up myself! So much cheaper going this route.
